Soylicious® Cream Cheese

Prep Time: 5 Minutes

Serves: 4

Ingredients:

  • 14.5 ounces of extra-firm tofu

  • 3 Tablespoons lemon juice

  • 2 Tablespoons extra virgin olive oil

  • 2 Tablespoons tahini

  • ½ Teaspoon of sea salt (plain salt will work as well)

Directions:

First, let us introduce you to a versatile food, tofu.

Tofu is a budget-friendly powerhouse—mild in flavor, rich in protein, and easy to use in both savory and sweet recipes.

STEP 1: Remove the excess water from the tofu.

  • Drain the tofu in a strainer.

  • Wrap the tofu in several paper towels and squeeze the excess water out of the tofu.

  • It will break up, but this is OK.

 

STEP 2: Mix the ingredients in a small food processor/blender. It’s Easy!

  • Break the tofu into chunks and place in the processor.

  • Add remaining ingredients and blend for 5 minutes until the mixture is exceptionally smooth.

STEP 3: Chill for 2 hours and serve.

  • Can be prepared ahead and stored in the refrigerator. Best if used within one week.

  • Use as a spread for bagels, etc. Blend with seasonings as a dip or use to prepare a favorite dessert.

Note: We included plain Soylicious® cream cheese on our Thanksgiving charcuterie board. Plant-based sour cream was also a hit in our traditional corn casserole.
